Hardwood Roasted Pork Belly

It's eight degrees outside with a driving wind and blowing icy snow. It doesn't look like much will be going on outside once the sun actually comes up other than snow shoveling. To protest the terrible weather here is a photo of warmer times outside grilling. I just love pork belly and nothing is better than braised pork belly started off roasting over a hardwood fire. The smoke combined with the sweetness of the flesh and rich fat can not be beat!

If you are going outside stay bundled up because it's frostbite weather.
